225g barley grain
1 medium onion, chopped
1 litre or a generous 4 cups water
2 tablespoons low salt stock powder
bring to the boil, lower heat, cover and simmer gently for 40 minutes.
4 cups fresh watercress, finely chopped
Juice of 1 lemon (optional)
Pinch of ground black pepper
Boil for two minutes and serve hot.
If you like creamed soups, allow to cool slightly and whizz in a blender.
