With the icy weather that we are experiencing in South Africa, this is just what you need to warm you up from the inside out!
Ginger zinger soup
A light and sweet soup that can help if you have nausea and lack of appetite.
2 large carrots, scrubbed, peeled and grated
2 medium sweet potatoes, peeled and grated
1 small onion, finely chopped (optional)
2 inch piece of fresh ginger root, peeled and grated
2 pints (1 litre, generous 4 cups) spring or filtered water
1 tablespoon low salt bouillon powder (or to your taste)
Bring to the boil, lower heat, cover and simmer for 35 minutes.
Cool a little and whizz in a goblet blender or with a hand blender until smooth and golden.
Serve hot with snipped chives or fresh parsley.
